Low Iodine Diet: Day 4

I still have my cold. Blech.

Breakfast: Cream of wheat with brown sugar. Seriously...you can't mess this one up! Love it! :)

Lunch: Hashbrown with three egg whites. Juice. YUM! :)

Afternoon snacks: Popcorn, pears, sprite

Supper: The lunch thing was tasty, so I think that I'm going to go with that again. And popcorn. Yay for me! :)

Low Iodine Diet: Day 3

Breakfast: Oatmeal with raisins and brown sugar -- this was quite disappointing. I don't think that oatmeal can be eaten without milk. Period. :)

Lunch: Cream of wheat with brown sugar. Sprite.

Supper: Popcorn with non-iodized salt. Welch's white grape w/ cherry juice (I can have this because it's made with Red Dye #40 (I can't have Red Dye #3)). One hashbrown.

I know that this seems like a bland day, but I seem to have picked up a cold. I feel pretty congested and gross, but what do you do?! Anyway, I was in the mood for warm, comforting foods, so that's just what I had for breakfast and lunch. Now, supper...I just wanted something comforting and this was the best I could come up with. Well, really, pizza was the best, but I am not allowed that comfort food right now. :o)

Low-Iodine Diet: Day 2

Breakfast: Cream of wheat with brown sugar. No milk. :(

Lunch: Potato shredded into hashbrowns. Three Egg Whites. Juice.

Supper: I had a wonderful meal called, "Falling Off the Wagon." It was delicious!! Okay, it wasn't my plan to give up on the low-iodine diet, but it happened. I had a meeting after work for this group I'm involved in at the College and they were bringing in a catered meal. No problem! I'll just decline. I actually PLANNED to avoid it by preparing myself with snacks and such. However, only 8 people showed up (out of a normal 15-20) and it was VERY obvious (and rude!) if I would have said no. So...I had a little bit of it. Besides that, I was really hungry...and had a headache to boot. *sigh* Anyway...it was pot roast with potatoes, carrots and gravy (I tried to scrape off what I could), salad with a little dressing, lemonade. It was good! And tomorrow...back on track! :)

Low-Iodine Diet: Cans and Cannots

As a refresher, here's what I can and cannot have:

Avoid
• Iodized salt and sea salt and any foods containing iodized salt or sea salt.
• Seafood and sea products (fish, shellfish, seaweed, seaweed tablets, kelp).
• Foods or products that contain these sea-based additives: carrageenan, agar-agar, algin, alginate, nori (these food additives are seaweed by-products).
• Dairy products
• Egg yolks or whole eggs or foods containing whole eggs. Egg whites are acceptable, because they contain little or no iodine.
• Commercial bakery products.
• Red Dye #3. However, Red Dye #40 is OK.
• Most Chocolate (for its milk content).
• Some Molasses.
• Soybeans and most soy products (soy sauce, soy milk, tofu). However, soy oil and soy lecithin are both okay.
• Some beans: red kidney beans, lima beans, navy beans, pinto beans, and cowpeas.
• Avoid rhubarb and potato skins. The inside of the potato is fine.
• Iodine-Containing Vitamins, Food Supplements and Medications (check with your physician).

Limit
• Fresh meats. Up to 5 ounces per day of fresh meats such as chicken, beef, pork, lamb, and veal. • Grains, cereals. Up to 4 servings per day of grains, cereals, pasta, and breads without iodine-containing ingredients.
• Rices

Safe List
• Fresh fruits and fruit juices, except rhubarb, maraschino cherries (if they contain Red Dye #3), and fruit cocktail with maraschino cherries.
• Vegetables, preferably raw and fresh-cooked or frozen without salt.
• Unsalted nuts and unsalted nut butters.
• Grain/cereal products in moderate amounts (see above).
• Fresh chicken, beef, and other meats in moderate amounts (see above).
• Sugar, jelly, honey, maple syrup, and unsulfured molasses.
• Black pepper and fresh or dried herbs.
• All vegetable oils.
• Homemade foods (see the free Low-Iodine Cookbook from the ThyCa web site.
• Cola, diet cola, lemonade, sodas (except those with Red Dye #3), non-instant coffee and tea, beer, wine, other alcohol.

Low-Iodine Diet: Day 1

Breakfast: I buckled and bought a coffee. Mocha ice rage, to be exact. The coffee is not a problem...it's the added mocha and milk that's the issue. I ate some cream of wheat for breakfast, though, with some brown sugar on it. No milk.

Lunch: I took a potato and shredded it into hashbrowns. I mixed in some hamburger and added a little bit of cheese for extra flavor. It wasn't as good as I had imagined it to be, but it could have been worse.

Supper: I plan to head home here in a bit and have boiled eggs (just the egg whites, not the yolk, as the yolk is not allowed) and hashbrowns. Some juice, too. And maybe some applesauce. Yum! :)

Weekend Recap

We were supposed to have Monique's recipe/bridal shower this past Saturday but we had to cancel because of the weather! :( We had something like 8 inches of heavy, wet snow and all the roads in and out of town were closed for most of the day. After watching one person after the other get stuck IN town, we figured it was safer for the few of us in town to just STAY HOME!!!

So, that was a bummer. I don't know yet if we're rescheduling or what the deal will be. It just kind of depends on everyone's schedules!

One plus about the weekend was that I got a lot of sleep in! I wasn't feeling the best most of the weekend, though, so that was kind of a bummer. I'm not sure if I was feeling yucky because of lack of sleep or if it was other factors, but I was glad that I COULD sleep so much. By the end of the weekend, I was feeling much better.

So, guess what today is? The start of the dreaded cancer testing diet. Blech. But, I decided to just wait and start TOMORROW!! :o) Why? Well, I had some milk to drink up first and some leftovers from the weekend and I just didn't want to throw it out! With the way the economy is, it's not smart to just toss out food!! Okay, okay...the reality is that I didn't WANT to start the diet today, so I decided not to. Grrr...

Tomorrow, though. I'll start it tomorrow. Then, on May 10, I'll begin my week of testing. I'll receive some shots on Monday & Tuesday to superficially elevate my thyroid levels, Wednesday I'll take "the pill" (contains radioactive iodine for the scans), Thursday I'll get some bloodwork drawn and cross my fingers for good results as we wait for news of the "perfect" number, and Friday is the full body scan. Then, I'm done. Not so bad, huh? But that doesn't mean that I want to start this dumb diet. So, I'll just enjoy today and worry about the rest in the morning. :)

Monday Madness

I don't have much to share today. Most of you know that I work at a College. One thing that amazes me is how so many of these students make it into college. A lot of them barely seem able to function without someone holding their hand throughout the entire process. GROW UP!! Take responsbility!!! Sometimes their lack of preparation when they come to me with questions or concerns is astounding. A lot of them just expect me to do all of the background work FOR them, so they come in without a clue as to what they want, what they're trying to register for or even how to get help. I'm not joking, either. We still have students who come in (this is their 15th week of classes) and they STILL do not know the name of their instructor. Come on, kid...it's time to get with the program. I love my job, but some moments are just SO frustrating because of a student's laziness or impatience or just plain 'ol being spoiled through their entire life. Some days, I'm just not impressed with these kids.

That being said, this past weekend was a very simple weekend. I laid low and didn't do much of anything. In fact, I took a picture of what I did this weekend:
What? You don't know what that is? Well, it's me, sleeping in my bedroom! :) *heehee*

This week is already lined up to be a busy one, but after this, I think I'll feel like I have my head above water again. And hopefully that will help ME to have a little more patience with these students that really don't have a clue about life. :o)

Wedding Invitation Assembly Line

This past weekend, Monique and I were with some friends in the area because we had a specific task to accomplish: Assemble Monique & Daren's wedding invitations!!!! Overall, it was a fun weekend and there was a lot of laughter. I have to brag about Monique, too...she is NO bridezilla, that's for sure!! Sometimes, I know that these kind of events can bring out the worst in women, but not with Monique! She knows how to politely knock down someone's idea for something, all the while making that person feel like she's her best friend. It's really amazing! She's so smooth that there was a point this weekend where I didn't even realize that she had punched me in the arm because she didn't like my idea! I was flabbergasted to realize that she had rejected my idea and even more so to realize that I never even noticed it. That's how polite, kind and caring that Monique is. :o) *heeheehee* :)

Okay, so maybe I'm being a little dramatic in this storytelling, but my point is that we really did have a FUN weekend. Last month, we came up with a sample of what Mo wanted so that we could go into this past weekend prepared for it. Monique put out all these little piles of paper on the table and then specified what was supposed to be done with each pile and away we went! I was in charge of putting the map and directions together, Kristi was in charge of "punching" the front design onto the invitation, Kathy was in charge of punching circles and folding the main part of the invitation and Mo was in charge of the ribbon. Orlinda joined us after awhile and she helped wherever she was needed. Overall, everything turned out wonderfully!! There will be a few invitations that will need to be sent to folks that have poor eyesight because one thing or the other was kind of glued a little crookedly, but overall, Monique says she's very satisfied with the final outcome.

Here, I think that Monique was trying to reassure Kathy that it was okay that she had glued the flower upside down. Wait...maybe that wasn't what was really going on here. Whatever happened, it obviously tickled Mo's funny bone! :)

Our friends, Kristi and Jenelle, have babies. Kristi has a two-year old (not so much a baby! :) and Jenelle has a six-month old. Here is Monique with little Miss Chaizley (Jenelle's girl). Isn't she beautiful?!?!? Chaizley is such a fun baby...she lets you know when she needs something NOW, but she also is one of the most smiley babies that I think I've ever seen. I always enjoy these kiddos! :)
The men came in for lunch...we let them fend for themselves...okay, not really, but we certainly didn't let lunch slow us down! :)

This is Jenelle and Chaizley. Jenelle is not a big fan of stamping and assembling cards or invitations or whatever it is that is being done, so just just sat and visited with us. Well, she visited with some of us...she mostly just harrassed me. :)
And what about Kristi's boy, Corbin? Why aren't I showing pictures of him? Well, I tried to catch a couple of pictures of him, but that boy is ALL boy and he has entered the stage of NOT slowing down. Literally. He doesn't walk anywhere, it seems...he just runs. So, this is the best picture that I got of him this weekend... :o) (Make sure to take a look at his hand...that tells you how he was on the go! :)

So, another task is crossed off of Monique's wedding to-do list. YAY! :) Not only did we help get that task completed for Mo, but we had a lot of fun while doing it! Lots of good memories were certainly made! :)

Life

I just realized that it's almost been a week (again!) since I last posted, so I figured I should probably update this thing!!

I have been B.U.S.Y.!!! Okay...truthfully, I relaxed quite a bit this past weekend (aka, caught up on sleep), but overall, I had a nice weekend and I spent a lot of time with friends. It was a good time!

Now this weekend is already full with some plans. I get to spend the weekend at a friend's house (remember the cute boy from a month ago?) and we are spending all day Saturday assembling wedding invitations for Monique. Mo decided that an assembly line would be awesome, so that's just what we're doing! It'll be a good time and the bonus is that hopefully Monique will walk away from the weekend with another to-do item checked off of her wedding list!! Yay!! :)

There are officially three weeks and one day of classes left and then it's finals week and then SUMMER!!! Okay, so with where I live, I'm using the word "summer" very loosely because at our elevation, summer arrives at the end of June. Seriously. :) But after finals week, it means that the semester is over and then I only have THREE more semesters left before graduation!!! WAHOO!!! The other day I debated about slowing things down and then graduating in December 2011, but then I decided, "Nope. I'm pushing through and getting DONE." Let's hope that it works out that nicely. :)

So, there's my update for you! I'm just finishing up the semester and still playing some catch-up at work from our advising week. Life is good and I'm happy, so I can't add much more to this post than that! :) Hope you're doing well, too!! Oh, by the way...has anyone out there ever watched "The Millionaire Matchmaker"? Wow. I'm sure the show is jazzed up a bit for entertainment, but one thing I do know...I don't think I'd ever want to date a millionaire. Just sayin'. :o)

April 1st

It's April 1st and we have about 2 1/2 inches of wet, heavy snow and it's STILL snowing (albeit, lightly) with weather predictions of snow all day today, tonight, tomorrow, Saturday night and all day Sunday.
